Fried Beef with Basil and Egg (Put Kaprow)

I grew up eating this, this quick bite at the street stalls accompany with a douse of chili fish sauce has made my childhood very happy. With my recent buy of fish sauce and fresh basil, I’ve re-created this dish to bring back my Thai influence into our home here. Serve with Thai jasmine rice.

Serves 2

Fried Beef with Basil and Egg, with Chili Fish Sauce

Fried Beef with Basil

  • 300 grams of ground beef
  • 1~2 tbsp of oil
  • 1 small onion, sliced thinly
  • 2~3 bird chilies, chopped
  • 2 garlic cloves, chopped roughly
  • half a red pepper, cut into bite sizes
  • 1 tbsp of oyster sauce
  • 1 tbsp of soy sauce
  • 1 tsp of fish sauce
  • 1 tsp of brown sugar
  • generous pinch of white pepper
  • a big handful of basil leaves
  1. When wok is hot, drizzle oil, when oil just starts to smoke, add garlic, chili and onion.
  2. Once the garlic aroma comes out and onion turns golden, add sugar and stir-fry for another 1 minute; add meat and fry around 5 minutes; add soy sauce, oyster sauce, fish sauce, red pepper, white pepper and stir-fry until meat is cooked, another 2~3 minutes.
  3. Take wok off heat and add basil, stir-fry until leaves are wilted.
  4. Serve the dish with Thai jasmine rice.

Fry Egg

  1. Put wok back on heat, add oil; fry egg sunny side up and drizzle a few drops of soy sauce before scooping it on the dish.
  2. Indulge with a few spoonfuls of Chili Fish Sauce.

Chili Fish Sauce

  • 2 bird chilies, sliced finely
  • 1 tbsp of fish sauce
  • 3 tbsp of water
  1. Mix ingredients and set aside for 10 minutes.
  2. Accompany with rice and dish.
